We have drawn on the fresh local market influences of Asia and the Pacific regions, the uniquely wonderful Australian bush foods, and the easily obtainable modern Western ingredients to bring you dishes, which represent the melding of where cultures meet.

Born in the Philippines, Executive Chef Neil Salonga integrates his culture with the raw and subtle flavours of the Territory. Having opened a restaurant in Melbourne, he returned to Darwin, where his unique signature remains distinctive. "Food needs to be accessible to everyone", says Neil," I want to bring a new level of imagination and feeling to it, while still providing dishes that everyone can relate too." Neil’s pursuit of excellence is reflected in the menu, his determination for perfection engrained in his staff.
